Butter bean salad with calamari (or shrimp), rosemary and pumpkin seeds

FANTASTIC FOR A LUNCH OR DINNER AND SERVED WITH A MIXED HERB SALAD

Ingredients (serves 2)

100g bacon pieces or calamari or shrimp

1x400g tin of butter beans, drained

½ clove garlic, finely chopped

1 tbsp pumpkin seeds

1 sprig fresh rosemary, finely chopped

Olive oil

Salt and pepper

½ tsp Cayenne pepper or paprika (optional)

Instructions

1.Heat the oil in a small pan and toss the calamari or shrimp together with the cayenne / paprika for  1-2 minutes.

2.Add the beans and rosemary and cook together for a further 5 minutes until the flavours have combined well.

3.Remove from the heat and stir in the pumpkin seeds.

4.Season to taste

5.Serve warm
