Gluten Free Oat Bran, Coconut & Berry Muffins
A HEALTHY ALTERNATIVE TO SHOP BOUGHT CAKES & PACKED WITH DELICIOUS GOODNESS
Ingredients:
50g oat bran#
300ml while milk or soy, nut, rice milk
50g butter
50g desiccated coconut~
1 large organic egg
50g sliced almonds* (optional)
1 tablespoon baking powder
2 tablespoons honey~
50g buckwheat flour#
50g rice flour#
75g fresh or frozen berries~
Preparation:
- Soak the oat bran in the milk for c. 10 mins
- Beat in the softened butter and egg
- Fold in the flour and coconut and mix well
- Finally add in the berries, honey and sliced almonds
- Spoon the mixture in muffin cases and bake at 200C for 25 mins or until golden
#Oat bran, buckwheat and rice are naturally gluten free
~ Coconut, honey & berries provide natural sweetness so no sugar is necessary
*almonds can be substituted for any other chopped nuts or seeds
