Gluten Free Oat Bran, Coconut & Berry Muffins

A HEALTHY ALTERNATIVE TO SHOP BOUGHT CAKES & PACKED WITH DELICIOUS GOODNESS

Ingredients:

50g oat bran#

300ml while milk or soy, nut, rice milk

50g butter

50g desiccated coconut~

1 large organic egg

50g sliced almonds* (optional)

1 tablespoon baking powder

2 tablespoons honey~

50g buckwheat flour#

50g rice flour#

75g fresh or frozen berries~

Preparation:

  1. Soak the oat bran in the milk for c. 10 mins
  2. Beat in the softened butter and egg
  3. Fold in the flour and coconut and mix well
  4. Finally add in the berries, honey and sliced almonds
  5. Spoon the mixture in muffin cases and bake at 200C for 25 mins or until golden

 

#Oat bran, buckwheat and rice are naturally gluten free

~ Coconut, honey & berries provide natural sweetness so no sugar is necessary

*almonds can be substituted for any other chopped nuts or seeds
