It’s the weekend!!!
We love easy-cook dinners here at Kalila. As busy mums what’s better than being able to plonk a few simple ingredients in a tray and walk away while it bakes. This duo of dishes is a winner every time and are so quick to prepare you’ll have blasted through your to-do list of a million jobs before it’s even out of the oven!
If you’re enjoying the last rays of summer and want to indulge in something light and fresh then try the chicken, tomato and basil bake below. Or if you’ve shifted into autumn and want a warming dish then opt for the chicken, bacon and leek bake. Both are delicious (we’ve tasted them!). Serve with a couple of portions of veggies using whatever you have to hand from fresh salad to frozen veggies. Then sit back and enjoy with your family.

Chicken, Basil & Tomato Bake
Ingredients (Serves 2-4): 2 largechicken breasts <500g, 8-10 cherry tomatoes, 1 bunch of basil leaves, salt and pepper, olive oil
Preparation: <1 hrs cooking time (based on exact weight of the chicken).
- Pre-heat oven to 180-190C
- Prepare an oven-proof dish with a small amount of olive oil to cover the tray.
- Place the chicken breasts in the dish.
- Wash and half the tomatoes place in the dish around and over the chicken.
- Lastly roughly chop the basil leaves and sprinkle across the chicken and tomatoes.
- Cover with baking paper / foil for the first 30-40 minutes to help cook the meat evenly, and place the dish in the oven. Remove the paper after 40 mins.
- Once the cooking time is complete check the meat with a large skewer by inserting it into the centre of the meat and seeing if the juices that escape are clear. If there is any sign of blood return to the oven and cook for a further time. Repeat this same process until cooked through.
Chicken, Leek & Bacon Bake
Ingredients (Serves 2-4): 1 pack of mixed Chicken wings and drumsticks, 2 leeks, 1 red onion, 1 small pack of bacon bits, salt and pepper, olive oil, optional fresh herbs; thyme or oregano
Preparation: <40 mins cooking time (based on exact weight of the chicken).
- Pre-heat oven to 180-190C
- Prepare an oven-proof dish with a small amount of olive oil to cover the tray.
- Flash fry the chicken pieces in a pan / wok for 5 mins until browned and then place in the dish.
- Chop the onion and leek and add to the chicken, with the raw bacon bits.
- Cover with baking paper / foil for the first 30-40 minutes to help cook the meat evenly, and place the dish in the oven. Remove the paper after 40 mins.
- Once the cooking time is complete check the meat with a skewer by inserting it into one of the pieces to see if the juices that escape are clear. If there is any sign of blood return to the oven and cook for a further 5-10 mins at a time. Repeat this same process until cooked through.
